Rooibos Stewed Beef
2 Rooibos Tea bags -brew tea in teapot until ready to add to stew.
4 cups water
4 peeled/cubed potatoes
4 organic medium carrots
8 organic bite sized pieces of broccoli
2½ lb. organic Soft Shin/Stewing Beef. Ask for large bone marrow bones and bonemeal which you can cook separately for your dogs and add on after serving.
2 Tbsp flour
1 Tbsp olive oil
4 tbsp Red Wine Vinegar
Scrape the carrots and chop up into cubes.
Remove as much sinew from the beef as possible and cut into bite sized cubes.
Coat beef with flour; heat the olive oil in a large saucepan over medium low heat.
Add the beef and braise until browned.
Add the rooibos tea and cook for 2 minutes. Add 4 cups water.
Bring the mixture to the boil and then immediately reduce the heat until the stew is at a very slow simmer.
Cover the saucepan and allow to simmer for 2½ hours or until the beef is tender.
Add the potatoes, broccoli and carrots, small amount of salt and pepper to taste and cook for a further 25 minutes until the potatoes are almost soft.
Can be served with couscous, quinoa, rice or just plain over potatoes and shared with your furry best friends and family.Freeze the leftovers in separate containers for each days serving .Sometimes, I’ll substitute spinach or kale for broccoli and top it off with Spirulina sprinkles.I love using the rooibos tea instead of beef stock for flavor because of it’s powerful antioxidants.
